I WANT LEMON COOKIES!
Remember the cookie I was yakking about in my blog the other day? Well, I have a recipe that is similar and it’s super, super easy!
Easy Lemon Cake Mix Cookie Recipe
1 pkg. lemon cake mix
1/4 c. oil
1/3 c. water
1 egg
Combine ingredients in a large mixing bowl. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes at 350 degrees.
After the cookies are cool. Slather the tops with canned lemon icing!
Here’s another lemony cookie recipe I found using a cake mix. But this recipe has BALLS (. . .who said that?!?).
Easy Cake Mix Lemon Balls
1 pkg. lemon cake mix
2 c. Cool Whip, sm. carton
1 egg or 2 egg whites
Lemon juice (opt.)
Mix all together. Form into balls. Roll in powdered sugar. Place on lightly greased cookie sheet. Bake at 350 degrees for 10 minutes until lightly browned. Do not over bake.

So happens, I had just sent off 3 doz. lemon cake mix cookies to a meeting when I was checking email and found your recipes. I’ll add the frosting next time. I did add poppy seeds and lemon rind to mine. I felt so atuned to Pickleworld.

Thanks for the recipe, Mark! I have oodles of cake mixes in the cupboard and cupcakes are a PITA and we aren’t big cake eaters here. Of course now I wonder why I have those mixes in the first place. At least now I have a way to use them up!

store didn’t have the lemon frosting so I’m going to give it a shot with cream cheese frosting!
