A student at college had failed his final law papers and was obviously not happy. He questioned the professor and decided to make a deal with him.

“Professor, do you consider yourself to know everything about the law?” He asked.

“Absolutely, otherwise I would not be capable of standing in front of you and lecturing you on the subject,’  he replied.

The student continued “If you can answer this question, I will agree with you and accept my final marks. If you cannot, you have to give me an ‘A.'”  The professor laughed but agreed.

The boy continued, “What is legal but not logical, logical but not legal, and neither legal nor logical?”

The professor thought about it for hours and pondered no answer. He had to finally give up as he really did not know.  He gave the boy his ‘A.’

The following day at his lecture, the professor was still struggling with his unknown mystery and decided to pose the question to his students: “Class, what is legal but not logical, logical but not legal, and neither legal nor logical?”He paused for a second in shock when all students raised their hands with a possible answer. He pointed out one student and waited:

“Sir, you’re 65, and married to a 28 year old woman, this is legal but not logical. Your wife, is having an affair with a 23 year old boy, this is logical but not legal.  Your wife’s boyfriend has failed his exam and yet you have given him an ‘A’. That is neither logical nor legal”.

The professor collapsed. —

Ribs aren’t just for the 4th of July or huge barbecues.  These flavorful ribs cook on the grill while you’re setting the picnic table.

 GRILLED SPARERIBS WITH MAPLE-CHIPOTLE GLAZE

For the ribs
  • 1 Tbs. granulated sugar
  • 1 Tbs. chili powder
  • 1/2 tsp. ground cumin
  • Kosher salt and freshly ground black pepper
  • 2 racks pork spareribs (about 9 lbs.)
For the glaze
  • 3/4 cup pure maple syrup
  • 1 chipotle chile, chopped, plus 3 Tbs. adobo sauce (from a can of chipotles en adobo)
  • 2 Tbs. ketchup
  • 1-1/2 Tbs. Dijon mustard
  • 1 Tbs. cider vinegar
Prepare & cook the ribs

For a gas grill, light the front burner to medium-low and leave the back burner(s) off. For a charcoal grill, light a medium fire (300°F to 350°F) with all the coals banked to one side and the other side empty. Clean and oil the grill grates.

In a small bowl, mix the sugar and spices with 4 tsp. salt and 1 tsp. pepper, and pat over both sides of the ribs. Let sit at room temperature while the grill heats.

Set the ribs meaty side up over the cool zone of the fire and cook covered (with the vents open on a charcoal grill) until the ribs brown and become tender (a paring knife should easily slice into the meat and the ribs should sag if you hold the center up with a pair of tongs), about 1-1/2 hours.

Make the glaze

Stir together the maple syrup, chipotle chile and adobo sauce, ketchup, mustard, and vinegar in a medium bowl until combined. Brush the ribs with half the glaze and cook with the grill covered, brushing the meat every couple minutes, until the glaze browns and becomes sticky on the ribs, about 15 minutes. Remove the ribs from the grill, brush with the remaining glaze, and let cool for a couple minutes; cut in half (meaty side down so they’re easier to slice), and serve.

Serving Suggestions

Serve with cookout classics like Grilled Corn on the CobCider & Bacon Baked Beans, and a pitcher of Iced Tea.

Fluffy marshmallows, chopped pecans and chocolate frosting—who knew mud could be so delicious?

MISSISSIPPI MUD BROWNIES

  • 1 1/2 cups coarsely chopped pecans
  • 1 (4-oz.) unsweetened chocolate baking bar, chopped
  • 3/4 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 3 cups miniature marshmallows

CHOCOLATE ICING

  • 1/2 cup butter $
  • 1/3 cup milk $
  • 6 tablespoons unsweetened cocoa
  • 1 (16-oz.) package powdered sugar $
  • 1 teaspoon vanilla extract $
  1. Cook first 3 ingredients over medium heat in a large saucepan, stirring constantly, 4 to 5 minutes or until butter melts. Remove from heat, and beat in powdered sugar and vanilla at medium speed with an electric mixer until smooth.

BROWNIE PREPARATION

  1. 1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 6 to 8 minutes or until lightly toasted and fragrant.
  2. 2. Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 to 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in sugar and eggs until well blended. Stir in flour. Spread batter into a greased 13- x 9-inch pan.
  3. 3. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Sprinkle warm brownies with toasted pecans and marshmallows.
  4. 4. Prepare Chocolate Frosting. Pour over pecans and marshmallows; spread to edges. Let cool 1 hour on a wire rack. Cut into squares.
