MEXICAN STUFFED SHELLS

Mexican Stuffed Shells Dinner Recipe

Ingredients: 

  • 16-18 jumbo pasta shells
  • 1 lb. lean ground beef
  • 1 package taco seasoning
  • 4 oz. {1/2 block} cream cheese
  • 1 & 1/2 cup salsa
  • 1 & 1/4 cup taco sauce
  • 2 cups cheddar-monterey jack blend cheese, shredded
Directions:
  1. Preheat oven to 350°F.
  2. Fill a medium size pot with water and bring to a boil.
  3. Add the shells and cook until al dente. {I like to be a lot more on the harder side because I’ve found that they rip if they are too soft and they still keep cooking later on.}
  4. Once they are done, drain and run under cool water.
  5. While the shells are cooking, brown the meat in a large skillet.
  6. Add the taco seasoning, according to package directions.
  7. Add cream cheese, cover, and let simmer until cream cheese is completely melted and then stir well.
  8. Pour salsa into a 9×13 inch dish.
  9. Scoop a spoonful of meat mixture into each shell and place in pan.
  10. Repeat until all shells are used. {Or until you run out of mixture.}
  11. Spread taco sauce evenly over shells. {Make sure to cover each shell completely to prevent them from drying out while cooking.}
  12. Cover with aluminum foil and bake for 27-30 minutes.
  13. After baking, spread shredded cheese evenly over shells and bake for 9-11 more minutes, uncovered.
  14. Top with desired toppings – green onions, black olives, sour cream, etc.

All Purpose Cleaning Spray

1 tablespoon borax
1 tablespoon washing soda
1 teaspoon dishwashing soap
1 cup vinegar
4 cups hot water
25-30 drops essential oil (optional)

Whisk all ingredients together well in large bowl, then pour into spray bottle.  Spray on, then wipe surface clean with a damp cloth.  Can be used to clean and disinfect almost any surface!

BUCKEYE BROWNIE COOKIE

Real jewel in the world of cookies – Buckeye Brownie Cookies (brownie base, peanut butter and chocolate ganache)

Ingredients
  • 8 oz bittersweet chocolate- chopped
  • 2 tablespoons unsalted butter ( room temperature)
  • 2 eggs
  • ½ cup + 2 Tbsp cups granulated sugar
  • ½ teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 4 oz semisweet chocolate
Instructions
  1. Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
  2. Melt the butter and 8 oz bittersweet chocolate in a heatproof bowl over a saucepan of barely simmering water, stirring occasionally until smooth.
  3. Stir together the eggs, vanilla and granulated sugar in a medium bowl, set aside.
  4. Whisk together the flour and baking powder.
  5. Add melted chocolate mixture to the egg mixture and stir to combine.
  6. Slowly add dry ingredients and stir until it is well incorporated.
  7. In a separate bowl, mix powdered sugar with peanut butter until it is combined, then roll it into 1 inch balls. Make 24 balls and set aside.
  8. Scoop about 1½ tablespoons of dough onto prepared baking sheets (if the batter is to thin leave it in the fridge until it’s firm enough to handle)
  9. Bake for 10 minutes or until they are firm on the outside, but do not overbake!
  10. When the cookies are baked, press peanut butter balls lightly into the center of each cookie , let the cookies to cool for 5 minutes in the pan then transfer them to a wire rack to cool completely.
  11. Melt semisweet chocolate and spoon over the peanut butter.

    I have the mini scone pan. Love it. it is just the right size when I take scones to my quilt guild meeting.

        I don’t usually use mixes, but I like the King Arthur scone mixes, especially the cranberry orange mix ( I add some currants to it). Check out their recipes too.
