The city miser was on his death bed, as his last request he asked to be alone with his lawyer, doctor, and priest. “I know I am going to die” he said ” and I would like to take my money with me, so I am going to give each of you $150,000 and I want you to each make sure the money gets in the coffin.”

It was a few days after the funeral when the priest over flowing with guilt finally confided to the other two that he only put $100,000 back.

“I’m glad you brought it up” said the doctor, “because I have also been feeling guilty, I only put $80,000 back.”

“You people should be ashamed of yourselves” stormed the lawyer “stealing money like that, am I the only honest person here? Here look at this” he said pulling out his check book, “look I wrote out a check for the full $150,000!”

ORANGE-GARLIC BUTTERFLIED CHICKEN

Ingredients

• 1 whole chicken (about 4 pounds)

• 1/4 cup  sweet orange marmalade

• 1/4 cup  orange juice

• 6 cloves garlic, sliced

• 2 tablespoons  ponzu sauce

• 1/4 teaspoon  salt

• 1/4 teaspoon  pepper

• 1 orange, quartered

Directions

1. Heat oven to 425 degrees F. Remove chicken from packaging, saving giblets for another use. Turn chicken so it is breast-side down on cutting board. With kitchen shears, cut along both sides of backbone. Set aside with giblets. Flip over chicken and press down until breast cracks and bird lies flat on cutting board. Tuck wings under breast, if desired.

2. In a small bowl, stir together marmalade, orange juice, garlic, ponzu, salt, pepper and orange quarters. Place chicken on a rack in a roasting pan. Pour sauce over chicken and add 1 cup water to pan. Roast at 425 degrees F for 20 minutes. Reduce oven temperature to 400 degrees , cover chicken with foil and continue to roast for 25 minutes or until chicken registers 165 degrees F on instant-read thermometer.

3. Remove to a platter and pour pan drippings into a fat separator. Slice chicken and serve with defatted drippings alongside.

TABERNACLE CRUSH

This light and refreshing cocktail is as reminiscent of the American South as it is of the South of France. 

1. 1/2 large peach, sliced
2. 6 small basil leaves, plus more for garnish
3. 1/2 ounce fresh lemon juice
4. 1 1/2 ounces gin
5. 1 ounce Lillet
6. 1/2 ounce simple syrup
7. Ice
8. Club soda

1. In a tall glass, muddle the peach with the 6 basil leaves and the lemon juice. Add the gin, Lillet and simple syrup. Add ice cubes and top with club soda. Garnish with basil.

PEACH CRISP A LA MODE

INGREDIENTS

• 3 large fresh peaches, peeled and sliced, (or 6 cups thawed frozen peaches)
• 1 cup PLUS 2 Tbsp. original pancake and baking mix, divided
• 1 cup firmly packed light brown sugar, divided
• 3/4 tsp. ground cinnamon, divided
• 1/2 tsp. pure vanilla extract
• 1/4 tsp. salt , divided
• 1 cup sliced almonds
• 1/2 cup I Can’t Believe It’s Not Butter!® All Purpose Sticks, cut into 1/2-inch cubes
• 3 cups Breyers® Natural Vanilla Ice Cream

INSTRUCTIONS

1. Preheat oven to 375°.
2. Combine peaches, 2 tablespoons baking mix, 1/3 cup brown sugar, 1/4 teaspoon cinnamon, vanilla extract and 1/8 teaspoon salt in large bowl. Divide evenly between 6 (8 to 10 oz.) ramekins. Place on baking sheet; set aside.
3. Combine remaining 1 cup baking mix, 2/3 cup brown sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon salt with the almonds in medium bowl. Add I Can’t Believe It’s Not Butter!® All Purpose Sticks and cut with pastry blender or 2 knives until mixture resembles coarse meal. Press together with fingers until clumps form. Sprinkle evenly over peach mixture.
4. Bake 30 minutes or until bubbling in center and topping is golden. Serve topped with Breyers® Natural Vanilla Ice Cream.

• Recipe can also be made in shallow 2-quart baking dish. Increase baking time to 45 minutes.

“Mark’s lecture is worth whatever cost or trouble one goes through in order to hear it and see it. My husband and I saw Mark in Manchester, NH at the MQX show. The room was packed. We were at a table in the far back corner. In this position I could see the whole room. The problem with his lecture is that you are so sore from laughing and you can’t catch your breath. And he tells his stories as if you are the first audience to hear it. He has more to say than he does, skipping through quilts he brought to discuss at times. There were people at my table who also knew him, as I did. And others who hadn’t seen him before. He is very real…bearing it all. Therefore, we understand him and laugh because we have been there too. But, he is much more than that. He is at times frantic and crazy as he tells how he lives his life. If you haven’t seen his performance, make it a must on your bucket list before Mark gives it up. My husband and I think back on the things he said and did and laugh again. We have gotten great mileage out of his show. And if I ever have a chance to see him perform, I will do it. Because I had seen him previously, but knew I had to do so again. His show is always different and very worthwhile. And by the way, the people sitting at my table who had never seen him before were in shock…not knowing if his stories were real or not.
